Beginning from the grandfather; Clément-Félix JANIER, from Jura and located in “LES JANIER”, in a small place called Piards, close to Prénovel, traveling to Lyon with his cheeses: “Compté”.  Noël, son of Clément, fell in love with the cheese industry as a kid, joined and helped the family business. Several experiences allowed the success of the famous “Bleus d’Auvergne” and “Camemberts”.

Raw Milk – Cow – This Farmer Chaource AOP since 1996, comes from the farm des Tourelles in the middle of Aube area. In the 19th century, the traders, called les cossonniers, used to pick up the cheeses directly at the farm before selling them in different markets.

Bloomy Rind – Also known as surface ripened cheese. It refers to cheese which are ripened from the outside of it with a delicate creamy texture on the inside, while it being slightly firm in the middle.

The white and uniform fluffy rind defines Janier Chaource. The paste is creamy under the rind, smooth, dense, homogeneous, it can be chalky and friable in the center when it is still young. In mouth, the cheese is melting, milky, with fresh mushroom aromas and has a hint of salt.
